Yes - you can.
FormTitan allows you to concatonate the Date and Time controls to update a DateTime field in Salesforce.
To do so use the "ftTimeZone" function when mapping the field.
In the field mapping select custom and click "Configure" here you need to eneter ftTimeZone(Date Control,Time Control), for example:
