Set dropdown value from Salesforce and limit the available options for it on a form

Usually when you map the dropdown element in your form to a picklist in Salesforce, like account type for example, you draw all of the picklist options. But what if you wanted your form fillers
to have only a few of those options in the form dropdown?

how you can set a dropdown with a value from a Salesforce account (type) without the need to bring back the options from Salesforce.
This way you can limit the user's selection of account type.
